YOGHURT: Skin Food

yoghurt is produced by bacterial fermentation of milk. The bacteria called yoghurt culture is responsible for fermentation of lactose present in the milk, producing lactic acid. This lactic acid then acts on milk protein to give the tart or sour flavour and texture to it.
The milk used for producing yoghurt can be raw or pasteurised.

While Curd is made by souring or curdling boiled or pasteurised milk with edible acidic substances like lemon juice, vinegar or curd itself. It contains bacterias like Lactobacillus Acidophilus.

The bacteria used in yoghurt culture are Lactobacillus bulgaricus and Streptococcus thermophillus. Sometimes other bacteria like Lactobacilli and Bifidobacteria are also added during or after culturing yoghurt.

                                                       Yoghurt Culture

For producing yoghurt first the milk is heated at 85* C to denature the milk protein. Denaturing of milk protein is essential otherwise it will form curd from the milk. After heating at 85* C, milk is allowed to cool at 45* C which is suitable for culture. At this temperature, a bacterial culture is mixed and the same temperature is maintained 4 - 12 hours which allows the milk to ferment.
